Frasca's menu is a tribute to the food of Friuli-Venezia Giulia, Italy.
The menu changes seasonally to make the most of current harvests and the freshest produce, herbs, and spices. It favors products from the best local farmers and purveyors and reflects Friulian sensibilities about ingredients and proportion according to weather, climate, and calendar. Our menu celebrates the tradition of Frascas with the rustic elegance and simplicity of its dishes. And above all, it is Friulian. Each dish is inspired by the sophisticated flavors and international influences of the area that are at once quintessentially Italian yet unique to this extraordinary region.
At Frasca, we champion our local farmers; the very richness and diversity of Colorado's food products was a defining factor in our decision to open our restaurant in Boulder. We actively support and collaborate with our purveyors, and they provide Frasca with the finest naturally raised meats and organically grown produce available. We proudly salute them by including their name on the dishes they inspire.
