The most memorable wine experiences happen when a winemaker welcomes you into their home—sharing food, opening bottles, and telling the stories that shaped them. It’s intimate, illuminating, and unforgettable. Our Tastemaker Dinner series is designed to capture that same spirit: one table, a shared evening, and a sense of true connection. Each menu is crafted with the terroir in mind—because if it grows together, it goes together—creating a night where exceptional wines, thoughtful cooking, and genuine hospitality transport guests to the heart of each region.

An Evening in Brda with Edi Simčič

Founded in the 1960s by Edi and Marica Simčič, Edi Simčič Winery began with just 3.5 hectares in Slovenia’s Brda Hills. After decades working with the Dobrovo Agricultural Cooperative, the family bottled their first wine in 1989. In the 1990s, their son Aleks took the reins, expanding the estate and bringing international recognition to the Simčič name. Today, Aleks works alongside his sons, Jure and Jakob—the third generation—who returned home after gaining experience abroad. Together, they farm 13 hectares and produce wines of depth, precision, and unmistakable sense of place.

Brda lies just across the border from Friuli’s Collio, shaped by the cooling influence of the southern Alps and the warmth of the northern Mediterranean. These conditions yield textured, mineral-driven whites and complex reds from old Bordeaux varieties. Farming has always been sustainable, with no chemicals used in the vineyards, while native fermentations and aging in a mix of new and used barrique result in wines that are polished yet deeply expressive. Widely regarded as one of Slovenia’s great winemaking families, Simčič continues to evolve as the next generation steps forward.
